Aka, pancakes put in a 9×13 pan and baked in the oven, rather than on a pan on the stove top.
Ingredients:
- Whatever gf pancake mix you like. I like GF Bisquick pancakes, so that’s what I use.
- Note: apple sauce can be substituted 1:1 for oil and makes things taste better and fluffier.
- Mix ins: don’t mix in, wait until after you pour batter into the pan and drop them on top.
Instructions:
- Preheat oven to 425.
- Mix together your GF pancake mix. Don’t mix the chocolate chips etc in.
- Use butter or whatever to grease a 9×13 glass baking pan.
- Pour pancake batter in. Tilt pan to spread it to the corners.
- Drop chocolate chips or other mix ins on top.
- Put in oven for 12+ min. I checked at 10 min and fork didn’t come out clean. At 12 minutes, the tops of the pancake started to “crack” around the chocolate chips, and fork came out clean. (Different oven required ~16 min).
